    Happy New Year! It is officially 2014. Wow. I love the start of each new year. It's a great time to reflect on the past, move forward and set goals. Even though we can have "fresh starts" whenever we want, something about January 1st just makes it easier. To start off the New Year, I thought it would be fun to share some recipes!

    I've been watching food network since I was in 2nd grade and I love to cook. When I come home from college, I feel like I can cook whatever I want because my sweet mother stocks me up with the ingredients I need. With this blog post, I've decided to share some of my recipes. These meals are so simple and only require a few ingredients. You won't feel heavy or gross after eating/ drinking it! I eyeball everything so I don't know the exact measurements. But these are some of my favorites and I hope you enjoy! 



    So good. 

    ~ 4 to 5 avocados (I get them on sale)
    ~ Lime juice 
    ~ 1/3 cup of Red Onion
    ~  Roma Tomato
    ~ 3 tablespoons of Fresh Cilantro
    ~ Salt and Pepper to taste 
    ~ Corn chips (to dip!)

    If you like spicy- I recommend adding a chopped jalapeño. 

    I mash the avocados and the first thing I do is add a little salt and pepper, I then add a ton of lime juice. I always start off with a little and add more to taste. I like it with more lime because it reminds me of Chipotles guacamole. I then cut up the red onion finely about 1/3 cups worth (depends how many avocados you have). Then add chopped cilantro, about 3 tablespoons. Then I dice one roma tomato and voila!  I make this all the time. Even with two avocados for myself. I just balance out the other ingredients. 
                                 
    I've been drinking this smoothie every morning. It is very refreshing! Just make sure you eat something on the side with it. I normally eat an egg with whole wheat toast. I like to see what fresh fruits are in season or on sale and based off that, I'll buy certain frozen fruits. 

    ~ Fresh Pineapple 
    ~ Frozen Strawberries
    ~ Frozen Peaches
    ~ Spinach
    ~ 1/2 cranberry juice 1/2 water (to balance the sugar) 
    ~ Fat-free yogurt (I used strawberry or raspberry!)
    ~ Chia seeds for extra omega-3 and to reduce food cravings!



    I pick and choose what I want more of. I try to use more of the fresh fruit and use the other frozen fruit as "ice cubes". I put a hand full of spinach and just a splash of juice! You can add water if its too thick! Enjoy! 





    Why spend tons of money on caprese salad at a restaurant when it is so simple to make at home? This is probably one of my favorite things. It's so simple, very healthy and fresh tasting. There so many ways to prepare it. But here is a recipe I normally prepare.


    ~ Fresh Mozzarella 
    ~ Beef steak tomato or vine ripen tomatoes
    ~ Fresh basil
    ~ Extra virgin olive oil
    ~ Salt and Pepper to taste

    I first wash the greens and tomatoes. That is very important especially because you aren't cooking it. I then slice the tomato and slice the mozzarella. I put one mozeralla slice per tomato slice, then add a basil leaf on top. I lightly drizzle the olive oil and then garnish with a sprinkle of salt and freshly ground black pepper. A few other alternatives is adding balsamic vinegar or a reduction to it to make it more sweet. Also, if you are on the go- using grape tomatoes, mozzarella balls, and basil and using the olive oil as a dressing makes a nice salad!





    Whenever you are done in the kitchen, it is always nice to relax and wind down.

    You’re stressed, overworked, and tired. You feel like you're messing up on so many things. You find yourself laying in bed at the end of the day thinking of everything you need to do tomorrow, and what to check off your to-do list. So many papers due, exams coming up, etc. Things don't work out, plans don't go as planned, and you get let down. This is life. 

    Recently I have been so, so worn! With school, work and my social life. And sometimes I feel like I am wasting so much energy. I have to-do lists in my planner, on my phone and even on my desk. What am I doing! There are so many things that we waste huge amounts of energy on. And worry is always wasted energy. Which (thankfully) won't matter in a few weeks, let alone ten years. Think about it- 10 years from now (varies on who is reading this) you could be married, have three kids, have grand children, be moving to another country, be getting a promotion at your work... wait, pause. That is crazy to think about.

    So let's stop.

    But here are ten examples of things that you might be stressing about today that will not matter in ten years' time:
    1. That super embarrassing moment you just had in front of people
    2. That hurtful break up
    3. Getting a D on a paper
    4. Being late to work
    5. Not getting the job that you really wanted
    6. Letting your best friend down
    7. Spending all your time worrying about school and your GPA
    8. Trying to impress your peers
    9. Losing one of your favorite clothing items
    10. Feeling discouraged with yourself about something you did

    We're so stuck in the moment. We never think about the future and think "does this really matter?". We can at least have hope that in ten years, it won't.

    Now here is ten things that really will matter, long term.
    1.Writing down your goals
    2. Telling your friends and family you love them
    3. Eating plenty of fruits and veggies
    4. Getting up early to work on something that really matters to you
    5. Spending time to learn something new
    6. Taking time for yourself, to think and pray
    7. Doing something completely unexpected for someone
    8. Being there for someone, and being a big part of their life
    9. Painting, cooking, exercising, journaling- doing things that make you happy
    10. Striving on your relationship with The Lord

    The things on the second list are the ones that will really matter. Instead of worrying over some little mistake, think about your actions that build up to a bigger picture.

    - Focus your attention on the things that will matter in ten years- stop wasting time on the tiny ups and downs of your day that you'll most likely forget about in a week. It's okay to be upset and stressed. It's not a bad thing. But sometimes we focus our time too much on small things. I know I am guilty of it. But when I look back, I think- why the heck did I care that much? It doesn't matter now.

    I will never forget how frustrated I was when my computer completely crashed and I lost almost all my music and pictures. But what would I rather look back on in 2023- ten years of stressing over a cleared computer, good grades and a tidy room, or ten years when I made huge strides towards accomplishing my goals.

    Think about it.

    Hey you. 

    Yes, you. Stop being unhappy with yourself. You are perfect. Stop wishing you looked like someone else or wishing people liked you as much as they liked someone else. Stop trying to get attention from those who hurt you. Stop hating your body, your face, your personality, your quirks. Love them. Without those things you wouldn't be you. And why would you want to be anyone else? Be confident with who you are. I bet half the flaws you notice about yourself, no one else does! Smile, it'll draw people in. 



    It can be so hard loving yourself. And who knows, maybe you love everything about yourself! And that is great! But we all have insecurities (I know I do!). But I think one of the biggest now days is not feeling "loved". We all experience emptiness by someone that was once important or is still important in our lives, but not showing the love we need.  We all go through tough times like this. 

    We need to change this. I encourage you all to love on others. You never know what is going on, deep down inside of someone. You don't have to say you "love them", but just show it. Me personally, I love being loved or being told that. I remind myself, that since I love that so much- I want to share that with others. I may fail at times and sometimes I don't even receive it in return, but it still makes me happy. 

    Heres the challenge- Today, all you need to do is tell one person that they are loved. It doesn't need to be all creepy and weird. Being "loved' doesn't mean you are madly in love with them. If they ask by who, simply tell them "by anyone you want". 

    {Everyone is loved and everyone deserves to be told that.}

    Yes, you. You are loved so much! And I'm sure that you have so many great qualities about you, that make you so easy to love!

    I don't think I've ever formally introduced myself! This is just a fun little tag, about myself!
    (Disclaimer- I did not come up with these questions)

    1. Were you named after anyone? 
    Nope! My parents had a friend named Regan and thought it was pretty. But my middle name is named after my Grandma! 

    2.When was the last time you cried? 
    When I got really sick and had to still go to work and school. It was awful.

    3.Do you like your handwriting? 
    Depends what kind of mood I'm in. 

    4.What is your favorite lunch meat? 
    Turkey. But I'm currently not eating meat right now! So Pb & J :)

    5.Do you have kids? 
    I have 7 gorgeous... roommates. 

    6.If you were another person would you be friends with you? 
    Yeah, of course.

    7.Do you use sarcasm a lot? 
    Yes. Too much sometimes. But usually only with people I'm comfortable with. 

    8.Do you still have your tonsils? 
    Yes 

    9.Would you bungee jump? 
    Heck yes! 

    10.What is your favorite cereal? 
    Smart Start or Grape nuts (and if I'm feeling naughty then reeses puffs hehe) 

    11.Do you untie your shoes when you take them off? 
    Very rarely

    12.Do you think you're strong? 
    No. But I get the job done. 

    13.What is your favorite ice-cream? 
    Chocolate chip cookie dough. All the way. 

    14.What is the first thing you notice about people? 
    Probably how they're dressed and their eyes. You can tell alot about people by their eyes. 

    15. Red or pink? 
    Red 

    16.What is the least favorite thing about yourself? 
    I like to procrastinate. 

    17.Who do you miss the most? 
     I miss my parents and animals a lot! 

    18.What is your favorite thing to do?
    To go where I've never been! It's such an adventure, and you never know what to expect!

    19. Any tattoos? 
    Not yet. I really have an idea on three tattoos I want. I almost got one recently, but decided to wait. 

    20. What color shoes are you wearing? 
    I'm barefoot!

    21. What is the last thing you ate? 
    Veggie Sushi

    Yellow!

    24. Favorite smell? 
    I love SO many smells. So here is a few- Coffee shops, baked chocolate chip cookies, fresh Christmas tree, Indian food, new car smell, fresh herbs, mahogany teakwood candle (actually many, many candles)!

    25 .Who was the last person you talked to on the phone? 
    My sister

    26. Mountain hideaway or beach house? 
    Beach house, but I would love both!!

    27. Favorite sport to watch? 
    I really enjoy basketball and football!

    28.Hair color? 
    Brownish- with a hint of blonde kinda. 

    29.Eyes color? 
    Brown  

    30.Do you wear contacts? 
    Nope. But I have glasses.

    31.Favorite food? 
    If you know me- I love my black beans and guacamole. And when I'm home, Indian curry!

    Happy endings

    Prisoners, it was so intense and scary. But really good!

    Yellow

    Fall ;) But probably winter because of Christmas!

    Hugs and kisses....I can't choose just one

    Beatles- thats all I listened to for the longest time when I was little.

    Kenya, Africa. 

    45.Do you have a special talent? 
    I do a lot of small things. Like- playing guitar/piano, singing, crafts, cooking, and I used to make short films and edit them back in the day. But now I don't have much time. Hmm, I'm pretty good at finding good music! Thats a talent right?

    46.Where were you born? 
    Gainesville, Florida

    47.What makes you, you?
    I talk really fast and use my hands a lot when I talk. People always point that out. 

    48.What color is your house? 
    Tan-ish

    49.What color is your car? 
    Blue- I call it the blueberry because its small and bright blue. 

    50. What is the most important thing to you?
    Relationships. They mean a lot to me. With God, friends, family and everyone!
